A shark is a term for an experienced DFS player that takes advantage of fish. The term is similar to the "pool shark" term that describes a player who is really good at billiards and rules the table against weaker competition.
The shark term plays off the unfair advantage sharks have in the ocean compared to fish. This relates to the unfair advantage experienced players have over most newcomers to the DFS format. Sharks usually have a better grasp on player production and the price of each player to build their teams to compete.
